Collection: Yanagi, Sakimaru Takohiki, Kiritsuke Yanagi (Sushi & Sashimi Knife)

The Yanagi, Sakimaru Takohiki, and the Kiritsuke Yanagi are all long, slender blades used mainly to slice sushi and sashimi. 

The graceful, and long blade requires very little pressure when drawing it smoothly because of its extremely sharp and thin edge.

Most Sashimi knives are constructed from Japanese Carbon Steel (Blue or White Carbon), but there are some Yanagi that are constructed of stainless steel to make maintenance easier.
