About the Gyuto: About the Gyuto: The Gyuto is the Japanese equivalent to a European Chef's Knife. A versatile blade that can be used for cutting meat, vegetables & fish, making it suitable for preparing Western and Japanese cuisine.

About the Misono UX10 Series:  Using a high purity special stainless steel produced by a Swedish steel company, Misono has combined time-tested traditional techniques with new technological advances to create their ultimate line of stainless steel Chef's knives. Misono was established in 1935, and the company has been kept a small, exclusively family-owned business for decades. The company began as a kitchen tool blade maker for vegetable peelers. Today Misono is Japan’s oldest Western-style knife maker, with only fifty workers producing 150,000 knives a year.
