Collection: Usuba (Vegetable Knife)

The Usuba is the Traditional Japanese Vegetable Knife. Its squared-off blade makes it easier for chopping and peeling vegetables.

 Traditionally, it is the first knife that apprentice sushi chefs practice with, as the skills developed by using The Usuba are transferrable to other Traditional Japanese Knives.

 A popular skill that these chefs practice is called the "Katsuramuki", which is to peel a Daikon skin into a long continuous sheet.
